But in the world of pokemon, there are no normal animals. They just don't exist. There are no mice anywhere, so how can a pikachu be like something that doesn't exist?

Where did you get the idea that normal animals do not exist? They get bothered by flies, birds sing, they eat meat. They ate meat before Miltank as introduced.
